Lemonade Roasted Chicken for Convection Oven

Preparation Time for Lemonade Roasted Chicken: 20 minutes
Total Cooking Time for Lemonade Roasted Chicken: 90 minutes
Convection Oven
Ingredients for Lemonade Roasted Chicken
1 whole chicken (giblets and neck removed)
1/2 tsp ground black pepper
3/4 tsp salt
2 garlic clove, peeled and cut into half
1 small-sized onion, peeled and quartered
5 slices lemon zest
1 tbsp fresh lemon juice
1 tbsp olive oil
1/2-inch sprig fresh herb (marjoram rosemary, oregano, thyme)
Procedure for Lemonade Roasted Chicken
1. Transfer the toaster oven rack in the lowest portion of the oven. Set the microwave oven on convection and then preheat it at 205°C.
2. Rinse the chicken very well with cold water and pat dry it.
3. Cover the baking pan with foil and place the chicken on it with its wings folded under.
4. Mix the salt and pepper. Rub the chicken’s cavity with half of that mixture.
5. Place the herb, onions, lemon zest and garlic in the cavity of the chicken.
6. Tie the legs of the chicken together.
7. Rub the whole chicken with the remaining half of the mixture and olive oil. After that, drizzle the chicken with lemon juice.
8. Place and roast the chicken in the convection oven at 205°C for 20 minutes. Then, lower the temperature to 190°C and continue roasting the chicken for additional 12 minutes per pound longer. This means that if your chicken weighs 4 pounds then you are going to continue roasting the chicken for 48 minutes.
